Natural air seasoning of the staves for 24 months, using the chimney stacked method, results in a profound softening of coarse, bitter tannins and a great homogeneity of seasoning. The “Délicatesse” barrel brings out the wine’s fruit characters to perfection, without overburdening its tannic structure. It is particularly recommended for maturing aromatic white wines, but also certain red varieties where elegance is sought.
