Once the aromas of the oak have been revealed during the bousinage, the barrel slowly goes down in temperature before the trimming step.

At Tonnellerie Bernard, trimming is carried out using a double manual trimmer. The two ends of the barrel are trimmed successively.

The trimmer allows the barrel to be shortened and realizes the entire “peigne” : chamfer, “pas d’asse” and “jable“. The machine begins by drawing the beveled chamfer all around the barrel, then it traces the “pas d’asse” before pulling the “jable” (circular groove where the two heads will be inserted to seal the barrel).
